Easy Peasy Chicken Salad

CP and I have been in a bit of a rut recently with lunches and after basically scrounging for randomness last week, I decided it was time to do some meal prep for this week on the lunch front. I'm going to eat allllll the deli meat once this baby is here, but until then we agreed on a big batch of chicken salad for the week. Here's the simple recipe that is totally customizable...


For the chicken:
-Season four to six chicken breasts liberally with salt and pepper
-Add the chicken breasts, along with approx. two cups of chicken stock into a crock pot and cook on high for four hours
-After the four hours are up, remove the chicken breasts and shred them (they will essentially fall apart on their own at this point)
-Add some of the leftover chicken stock to the shredded chicken to keep it from drying out

Mix-in ideas:
-mayonnaise (if you're interested in a paleo mayo, here ya go)
-diced celery
-onion
-carrot
-chickpeas (I love adding these for additional protein and fiber!)
-grapes

I always forget how convenient it is to prep like this and just grab and go in the morning. I'm sure we'll need a break from chicken salad after this week, so if you have other big batch prep ideas, send them along in the comments!
