A Vow

Nope, we're not on wedding vows yet. However, I've made a vow to myself that I want to make a semi-fancy meal once a week.  I've always loved cooking and I've had the best chef to look up to in my dad, but somehow the time is just never there for to me to attack the complicated and yet scrumptious meals. Well, I don't make the time for it. We're healthy over here and can throw together tasty dinners, but I want to start pushing my culinary limits. I know that once school starts, weekly commitments ramp up again, and a good night's rest is hard to come by, I'll want to throw in the towel so I'm vowing that this WILL happen!

The mom of the kiddos I'm watching this summer had this cookbook out one day and I was hooked. Thirty minutes start to finish for meals that looked incredibly tasty?! I was sold. I made the first of many weekly meals out of it tonight (see how I'm convincing myself that this is going to stick?), and it was great. I even had to get a meat pounder in order to pound out the chicken, so I felt all sorts of fancy, hahaha. It was a chicken with orange riesling sauce, which sounded a bit weird at first but ended up being a great flavor combination.  CP's cousin Becca came over to check out our place and ended up staying for dinner, so it was fun to share the out of the ordinary meal with someone other than just the two of us.


On another note, HUGE HUGE HUGE thank you to my Uncle Gar (a loyal blog reader!) for coming down to help us out this weekend with the house.  No one knows more about fixing up homes, and we're so incredibly grateful that he took time out of his weekend to attack painting and door casings. CP was in heaven, needless to say.
