No, we're not talking art here....I'm talking about quinoa!! I've shared my love for quinoa on here before and it's really become my go-to for lunches recently. Each Sunday I've thrown together a giant quinoa salad that's lasted me for the week. Not only is it tasty, but it's EASY!
Here are some combinations that I've come up with.....
Protein Power: quinoa, chickpeas, celery, edamame, yellow pepper, goddess dressing (from Trader Joes)
Greek: quinoa, cherry tomatoes, cucumber, feta, kalamata olives, pinenuts, olive oil
Curried Tofu: quinoa, baked tofu, roasted carrots/brocolli/squash, peanuts, red curry sauce
Fruity: quinoa, chopped dried apricots, dried cranberries, pistachios, olive oil
There truly are so many different options with quinoa, and given how healthy and yummy it is, it's the perfect staple when you're sick of your normal routine. Next up, I want to try quinoa cakes.
Yum!!! We are ordering some quinoa with green bean this week (thanks to your post, ha) and plan on making a quinoa & black bean chili. I'll share the recipe if it ends up being any good!
