Chia seeds seem to be one of those superfoods that have been flying off the shelves recently. I've tried similar superfood fads, such as flaxseed, but could never seem to get into them. My co-worker Natalie and I started discussing chia seeds one afternoon and she 100% swears by them and puts them in everything. I was explaining to her that the seeds in their natural form are a bit tough to digest and can be coarse in texture. Luckily, Natalie had a solution! She described chia "paste", which is a mix of 2 cups water with 1/3 cup chia seed. You let it soak overnight and BAM you've got yourself a nice, smooth chia paste! It looks gross, but I've literally started mixing it with just about everything at breakfast! PB&J oatmeal, fage, cereal, smoothies...you name it, it's mixed in. I also like the chia paste because it gives the other bfast elements a nice and fluffy texture.

In a one-ounce (28 g) sample, dried chia seeds contain 9% of the Daily Value for protein (4g), 13% fat (9g) (57% of which is ALA) and 42% dietary fiber (11g), based on a daily intake of 2000 calories. The seeds also contain the essential minerals phosphorus, manganese, calcium, potassium and sodium in amounts comparable to other edible seeds, such as flax or sesame.
So, there you have it! A health fad I can jump on board with. OH, and when you see those chia drinks at Whole Foods or other grocery stores, grab one!! They're sooooo yummy!
PS. I just heard on the news that mosquitoes in the NoVA area have tested positive for West Nile Virus....eeek!! Welp, watch out little suckers, you're going down....
